I usually put the year the website was launched through the current year,
like this:
Copyright (c) 2000-2003 Yournamehere

I don't know if there's a legal reason for doing this. Many software
products display their copyrights like this, though.

If you wanted to be really fancy, you could use JavaScript or server-side
scripting to write the current year dynamically so it would always be, err,
up to date.
