In a word: Vmware.
This will let you run (not emulate, which is slower) DOS, Novell, Linux,
Win9x, NT/2000/XP, Solaris x86, etc. And there is academic pricing
available. The only disadvantage is that you need sufficient RAM and
CPU, but it sounds like this is a new system so it may qualify.

One of our faculty recently purchased a spiffy new system
with Windows 2000. He happens to be devoted to an old
software program called ChiWriter. It was first developed
in the old DOS days, and modified for use under Windows 95
before the vendor went out of business. It won't run at
all under Windows NT or 2000.
Does anyone know of a Windows 2000 application that will
emulate "true" DOS, perhaps in the 5, 6, and 7 flavors? If
so, can you send me the vendor and product information? A
few words about your experience with the product would
be helpful, too.
