    I've a couple of suggestions.

    What does the server indicate for memory usage and busy services (from the
    Task Manager) for a fresh boot and when lockups occur?

    Are you using Windows clients as well as SFM? Are you doing any anti-virus
    scans of the files in the Macintosh volumes?

    Does it happen simultaneously (more or less) for all clients? (if so, it's
    the server or the network as first choice, if not, it's the Mac)

    This suggests turning off 'remember recently used items' in the Apple Menu
    Options.

    I've only played with SFM, so I'll yield the floor!
